Lemon Basil Avocado Sherbet

Adapted from Sweet Life . 3 Avocados, medium size, seeded and peeled 1 cup half-and-half or light cream 1/2 c.  Honey or 2/3 c. Powdered sugar 2/3 c. Fresh squeezed lemon juice Zest from 1 lemon 15-20 Fresh basil leaves Blend the avocado, lemon juice, lemon zest and basil leaves in a blender until smooth. Add the cream and honey.  Blend again until well combined. Note: Adjust the amount of honey to your taste.  Start with 1/3 cup and slowly add more to sweeten the avocado mixture. Divide the avocado mixture into containers.  Cover and freeze for a few hours or overnight. Before serving, let stand at room temperature for 15-20 minutes. My comments: I don't own an ice-cream machine and I have no interest in buying one. Knowing me, an ice-cream machine will likely have the same fate as a pasta maker in this house: used a few times and then live out the rest of its life in some dark corner at the top shelf, never to be seen again. Jamaica Cake

1/2 c. Brown sugar 2 c. Flour 2 Banana, chopped 2 Eggs 1 can (14 oz) Crushed pineapple with juice 1 tsp Vanilla extract< 1/2 tsp Salt 1 tsp Baking soda 1/4 c. Vegetable oil 1/2 c. Applesauce, unsweetened Coconut shreds, unsweetened Preheat oven to 350°F. Mix together sugar, vegetable oil and applesauce. Stir in eggs, vanilla and pineapple with the juice. Add the flour, salt and baking soda. Mix well. Fold in the chopped bananas. Pour the cake batter into a greased 9x9" baking dish. (I used a silicone baking pan, therefore no need to grease.) Sprinkle the top with coconut shreds. Bake for approximately 30-35 min until the top is brown. Do the toothpick test to see if the cake is done. If not, cover with tinfoil and bake for another 10 min. Check for doneness again. Cool for 5 min before serving. My comment: My son's 2nd birthday is fast approaching and I wanted to bake him a cake. Simple Strawberry Cream Treat

Fresh strawberries Basil (dry or fresh) Honey 1-2 tbsp Light cream (or 2% evaporated milk) Whipped cream Mash up a handful of strawberries. Sprinkle a little bit of dried basil.  (Alternatively, you can add some finely chopped fresh basil leaves.) Drizzle a little bit of honey over the strawberries and add the light cream.  Mix. Top with whipped cream. My comments: My little guy loves fruits but even he is getting a little tired of the plain boring things I feed him on a regular basis.  So tonight I thought I'd jazz up the strawberries a bit and see if I can fool him into eating the last of the strawberries. When I was young, my grandmother used to cut the strawberries into cubes and serve them with white sugar and evaporated milk.  I loved the taste of it and I knew my son would too.  I had some light cream at home and I sweetened the dessert with a drizzle of honey.  Honey is a natural sugar which is a healthier choice of sweetener than...
