Thomas Muffins
Adapted from AllRecipes 's To Die For Blueberry Muffins Muffin 1 c. All-purpose flour 1/2 c. Rolled oats 2/3 c. Brown sugar 1/2 tsp Salt 2 tsp Baking powder 1/3 cup Vegetable oil 1 Egg ~1/3 c. Milk 1 c. Blueberries, fresh or frozen Streusel Toppings 1/3 c. Brown sugar 1/6 c. All-purpose flour 1/6 c. Rolled oats 1/4 c. Unsalted butter, cubed 1.5 tsp Ground cinnamon Preheat oven to 400 ° F. Line muffin pan with paper liners. For the streusel topping, combine the ingredients in a bowl. Smush the ingredients around with the finger tips but do not over-handle the butter. Cold butter is necessary for great streusel toppings. Set this aside while making muffin batter. For the muffin batter, whisk together the flour, rolled oats, brown sugar, salt and baking powder. Measure the vegetable oil into a large measuring cup. Whisk in the egg. Then, add enough milk to make the volume up to 1 cup. (I used 1 large egg and I used a little more than 1/3 cup of milk.)
